Healthy Breakfast Recipes
Hello friends. Welcome back. I hope 2022 is going to be a good year, filled with new adventures, unexpected opportunities and the most marvellous people to share the journey with. There are so many exciting things happening in the Bibby’s Kitchen, but more about that later. Cooking classes however, are back on track with the first module launching in February. Food-wise, we’re kicking off the new year with a host of happy, healthy breakfast recipes that are excellent mood-boosters and energy sustainers. At the top of my most loved and made breakfast recipes is Bircher muesli. Beyond oats, the choice of grain additions and toppings are endless. For my Creamy Coconut Bircher muesli with berry compote (from the Cookbook) I’ve added ground almonds and desiccated coconut for extra nuttiness and healthy fats.
Bircher muesli is the ideal choice for late risers who don’t have the time to rustle up a wholesome breakfast. Make the night before in sealable jam jars and store in the refrigerator. Grab one on your way out in the morning. For a scrumptiously start to the day, I’m sure my creamy overnight bircher muesli will become your go-to breakfast in a jar.

Addictively good Gluten-free puffed rice honey granola with almonds, millet and shaved coconut. Served with Greek yoghurt and sweet red plums, this breakfast bowl is a packed with everything you need to start the day.
Busy mornings need energy boosting breakfasts. These flower-powered tropical chia pudding pots are bright and fresh. Pudding pots hardly sounds like breakfast but here’s what you’re getting. Layers of creamy chia, tangy mango coulis, Greek yoghurt and juicy kiwis.

Besides being easy to prepare, chia puddings are convenient grab and go breakfasts. I make up a large batch the night before and mix in whatever fruit I have on hand. For these chia puddings I used blueberries, but raspberries and blackberries are as good. Essential to a Neapolitan chia berry pudding, is a chocolate layer. I like the chocolate flavour to be intense so I’m generous with the cocoa. Then, simply layer up the flavours in tumblers and top with frosted berries.
My Avocado Chocolate Breakfast smoothie bowl is a creamy combination of frozen bananas and vitamin E-rich avocado. The avocado might sound a bit iffy in a sweet recipe, but, it adds a silk-like texture and healthy fats. Top with summer berries, nuts and seeds or your favourite toppings.
When I need an easy dessert for hot summer days that’s light and fruity, I love making these decadent Chocolate and blueberry smoothie pots. Made with frozen bananas and blueberries they blur the line between dessert and breakfast.
